Once the ham is placed on the conveyor belt, a photocell detects it and the dosing system applies the necessary amount of nitrifying agent to the piece as it enters the drum. Once inside, thanks to the design of the paddles and the drum’s rotational movement, the hams rotate gently on their own axes, rubbing against the inner wall and preventing them from bumping into each other while the nitrifying agent is evenly distributed across their entire surface.
