The system is designed to enable highly efficient in-line processing with exceptional bleeding of each and every piece, regardless of anatomical differences between them, due to the adaptability of the entire assembly. The massage, combined with the bleeding process, allows for faster and more uniform salt penetration and absorption. Once the ham is positioned on the conveyor belt, it passes under the action of the clamps, which consist of conical rollers with different diameters and angles to fully adapt to the entire surface of the pieces, maximizing the pressure area and ensuring optimal bleeding. The massage system is based on the action of oscillators that press against a platform which, with or without a rocking motion, transmits the pressure cyclically to the conveyor belt on which the ham is transported.
